The processing of Zampone Modena IGP


The Zampone Modena PGI is obtained from carefully selected pork meat combined with pork rind, according to the dictates of the ancient recipe. The ground meat can be delicately flavoured with pepper, nutmeg, cinnamon, cloves and wine.

Then the mixture thus obtained is stuffed into a natural casing, represented by the skin of the pig’s front leg, linked to the upper end, according to tradition.

The pre-cooked product is packed in hermetically sealed bags and subjected to heat treatment at elevated temperatures for a sufficient time to ensure organoleptic stability.

Instead the raw product is dried in hot air ovens. In order to appreciate its organoleptic characteristics in this case it is necessary to boil it previously for approx 2 hours. So the product acquires its typical taste, the pink to red colour and firm texture of Zampone Modena.
