The processing of Cotechino Modena IGP


Il The Cotechino Modena IGP consists of noble parts of pork and rind, as required by the traditional recipe. The meat is gently minced and flavoured with spices and herbs (cloves, pepper, nutmeg, cinnamon and wine) and then stuffed into casings.

The pre-cooked product is packed in hermetically sealed bags and subjected to heat treatment at elevated temperatures for a sufficient time to ensure organoleptic stability.

Instead the raw product is dried in hot air ovens. In order to appreciate its organoleptic characteristics in this case it is necessary to boil it previously for approx 2 hours. So the product acquires its typical taste, the pink to red colour and texture to the cut of the Cotechino Modena.
