10 Apr Cold pasta with Zampone Modena sausage (PGI)
Short-cut pasta 250g
Zampone Modena sausage (PGI) 500g
Half a white onion
15 Cherry tomatoes
Feta cheese 200g
Black olives 200g
Salt, pepper and oil to taste
We start our recipe by cooking the Zampone Modena sausage in plenty of water, following the instructions on the packaging. Once cooked, cut into slices.
Fry the onion, finely chopped, in a pan together with a drizzle of extra virgin olive oil. Once the onion has started to soften, add the slices of Zampone Modena sausage and brown them. Then add the cherry tomatoes, sliced into quarters, and sauté them in the pan.
As soon as the pasta has cooked, drain it, add it to the pan with the other ingredients and stir fry it for a few minutes. Season with salt and pepper, then let it cool. Add the diced feta, and our cold pasta dish is ready!
