10 Apr Quinoa salad with Cotechino Modena sausage (PGI)
Cotechino Modena sausage (PGI) 500g
Small carrots 150g
Extra virgin olive oil 20g
Table salt to taste
Black pepper to taste
To prepare the quinoa salad, first place a pan full of water on the stove and bring it to the boil. Once the water is boiling, add the salt and pour in the quinoa. Meanwhile, start cooking the Cotechino Modena sausage in plenty of water, following the instructions on the packaging. At the same time, cook the carrots and peas separately.
Wash the radishes, trim the tops and bottoms and cut them into very thin slices using a vegetable slicer or a knife and dice the carrots. Once cooked, drain the quinoa in a fine mesh colander and quickly wash it under cold running water to cool it and stop it from cooking further. Then, place the colander over a bowl to allow any excess water to drain away. When it has finished cooking, slice the Cotechino Modena sausage. Now you can make your salad: pour the quinoa and peas into a large bowl, then add the carrots, radishes and slices of Cotechino Modena sausage. Dress with extra virgin olive oil and season with salt and pepper. Mix all the ingredients together and your quinoa salad is ready to be enjoyed!
